This hand-forged Bunka from the Jun has a classic three-layer, double-edged blade made with a polished blade finish. The core steel of the blade steel is brought to a Rockwell hardness of 61-62 HRC and make this knife more resistant to corrosion at the blade (though not at the cutting edge!). A bead blasting process (similar to sandblasting) creates the clean finish of the blade edges of these knives.

This bunka knife suitable for most purposes. it can be used for fish, meat, and vegetables. Compared to Gyuto and Santoku, the blade shape of a Bunka has advantages for processing fish due to its pointed tip.
