Through special heat treatment, Kanehide achieves a steel hardness of HRC 61, and the wear resistance is significantly increased through cryogenic treatment with liquid nitrogen (at minus 180°C!).
The result is a stainless knife that exhibits extremely good sharpening behavior and feels incredibly good to handle.
