The Japanese Deba, also known as the Jun or Hon-deba ("true deba"), is a one Japanese old traditional knife mainly used for cleaning and filleting different types of fish. And majority of people use cutting poultry and other meats with small soft bones. The substantial weight of the Deba knives is beneficial, as the sturdy heel section can excellently cut or chop through the bones of small to medium-sized fish and chicken when used with appropriate care.
